Teff is a gluten-free grain with an attractive nutrition profile. It's high in fiber and leads the grains in calcium content - 123mg per cooked cup. It is an important grain in Ethiopia and Eritrea, where it has traditionally been used to make injera, a bread that is a diet staple, as well as porridge and alcoholic beverages. Teff is, however, a powerhouse of versatility that can be used to make pancakes, breads, cereals, snacks, and more. Teff is similar to millet and quinoa in cooking, but the seed is much smaller--poppy seed sized--and therefore cooks faster.
