Rye, one of the top five cultivated grains in the world, is an excellent source of dietary fiber, starch and protein. Versatile and delicious, it is high in a number of functionally significant components (including minerals and vitamins), which are important for health when added to the diet in reasonable amounts. Minerals and vitamins present in Rye include B vitamins and vitamin E, as well as iron, magnesium, manganese and zinc.
If you're anything like us, you probably associate Rye with that lovely marbled bread with the unique taste. But as we have learned, that unique taste is not Rye; it is just the taste of caraway seeds that have traditionally been used to season Rye bread.
